The blade of the Yoshiharu W-10
The gouges are made from double-layer steel. This has a layer of very hard carbon steel topped with a layer of slightly softer steel that is less brittle. The result is gouges that are extremely sharp and remain so for a long time. Moreover, they are easy to sharpen as soon as they start to become blunt. The steel isn't stainless, so make sure you always dry the gouges well and store them dry.

The handle is made from magnolia wood. This wood feels wonderfully soft and provides plenty of grip.
